We rest every roast for at least a week so CO2 can gently degas and the flavour can settle. Then, within minutes, we seal the beans in nitrogen-flushed, triple-layer high-barrier bags fitted with premium one-way valves. This locks out oxygen and moisture while letting remaining gas escape, keeping Marin vibrant for up to 24 months. Because we buy directly from organic growers and roast in small batches in New Plymouth, we control flavour from farm to cup.
